Sausage Breakfast Muffin
(Serves 1, 4 points)
1/3 c. Egg Beaters
2 slices of Kraft fat-free American cheese Singles
2 slices Light Wonder wheat bread (or any other light bread)
1 Boca "sausage" patty
Heat the Boca patty in the microwave then cut it into bits. Toss it in with the Egg Beaters
and scramble them in a small frying pan. Toast the bread. Then make a sandwich like
this, bread, cheese, eggs, cheese, bread. The cheese melts and gets all gooey! It's
really good!

Tomato & Cheddar English Muffin
(Serves 1, 2 points)
1 WW English Muffin (if you use another kind, make sure it's 1 point)
2 slices tomato
1/3 c. shredded Kraft fat free cheddar cheese
salt & pepper to taste
Slice English muffin in half, top with tomato slices, then salt & pepper. Divide the
cheese between the muffin halves. Broil until warm. IMPORTANT: The fat free cheddar
probably will not melt, so don't use that as the sign for it being done.

Boca Omelet
Makes one omelet, 3 points.
1/2 cup Egg Beaters
1 Boca All American Burger Patty
1/3 cup Kraft Fat Free Shredded Cheddar Cheese
2 mushrooms, sliced
1/2 cup frozen peppers & onions
1/2 cup chopped tomatoes
Generous handful of fresh spinach
Salt & pepper to taste
Warm two small frying pans over medium heat. In one, fry up the veggies. In the other,
make your omelet. Microwave the Boca patty till hot then crumble into the veggie
mixture. Add veggies to completed omelet, then top with the cheese.
This is a very filling, low Points meal. I LOVE it! And it's so healthy!! Add seasoning to
your taste. Jazz it up with salsa or taco sauce. It's fun to play around with omelets.
