Garden Vegetable Bake
Four (pretty big) servings, 1.5 pt. per serving
1 zucchini
1 yellow squash
1 purple onion
4 large mushrooms
4 cloves minced garlic (adjust to your taste)
1 small green pepper
1 cup Classico Four Cheese Spaghetti Sauce
Fresh basil leaves if you have them
Salt & pepper to taste
4 T. parmesan cheese
Preheat oven to 350 degrees. Spray a 9x13 baking pan with nonstick cooking spray.
Slice the zucchini & yellow squash and put them into the baking pan. Set aside.
Slice the onions, green pepper, garlic, basil, and mushrooms. Fry them in a medium
frying pan until mostly cooked, then add the Classico sauce. Cook until warm. Spoon
mixture from frying pan over the zucchini & yellow squash. Sprinkle with salt & pepper.
Cover with aluminum foil and bake for about an hour, until the veggies are done to your
satisfaction. Top each serving with 1 T of parmesan.

Nicole's Garlic Bread
(Serves 1, 1 point)
2 slices Wonder Light Bread
I Can't Believe It's Not Butter Spray
Garlic powder
Adobo (or salt)
Mrs. Dash's Table Blend
Preheat oven to 375. Spray both sides of the bread with the butter spray. Sprinkle garlic
powder and adobo on both sides, then top one side of each slice with the Mrs. Dash.
Bake until your desired level of crispiness is reached. Please note that the bread will
NOT brown like regular garlic bread with butter does; it will just get crispy, so be careful
how long you cook it.

Nicole's Famous Nachos
(Serves 1, 7.5 points)
2 ounces of Baked Tostitos
1/4 cup fat free refried beans
1/2 cup chopped tomatoes
1/4 cup chopped onions
1/3 cup Kraft fat free shredded cheese
1/4 of a medium avocado, chopped
1/3 cup fat free sour cream
Salsa
Adobo (or salt) to taste
Taco seasoning to taste
Preheat oven to 375. Spray a pan with nonstick spray and put the Tostitos across the
bottom. Top with the refried beans, cheese, tomatoes, onions, adobo, and taco
seasoning. Bake until the cheese melts a bit (it won't melt like full fat cheese, so be
vigilant about checking. I think mine takes about 8 minutes.)
Play around with this one. Try black beans or Boca crumbles on it. If you think it's too
many points, be aware that the avocado has 2 points. You can leave that off and it will
still be good. Also, this makes a pretty big serving. I had it as my dinner during the
Steelers/Bengals playoff game.
